day 26 cake balls!

dear reader;


yes. i finally have my internet back ^^
*celebrates*


oh and happy australia day!  to all those 'true blue aussies' out there; )
isn't this so cool ! o.o
so err...what did i do yesterday...


i attempted to make cake balls! :D
and since i fely bothered, i took photos, documenting how i made them:

ingredients 

method:

preheat the oven to 180(degrees C) Grease + flour pan

Cream the butter and sugar until light and fluffy. 

add eggs, one at a time to the butter and sugar, mixing until just combined. scrape down the sides of the bowl after each addition. Add the vanilla extract and mix until combined. 

add the flour, a third at a time, alternating with the milk in two additions. add salt and baking powder to mixture as well. 


spread the batter into the prepared pan. (yeah...i added blue food colouring...because normal yellow cake just looks boring XD)

Bake for 35-40 minutes or until a skewer inserted in the centre comes out clean. 

Let the cake cool completely before crumbling for cake balls.

whilst the cake was in the oven, i prepared the icing~

icing
ingredients


  • 3/4 c butter at room temperature
  • 1 tsp vanilla extract
  • 3 cups icing sugar
method

Cream the butter and vanilla until combined


Add the sugar to the creamed mixture in two or three batches scraping down the sides of the bowl after each addition.- (i added apprx 4TB worth of milk to the icing to make it smoother)

 ...and more food colouring to make it all pretty ><


mix until well combined :)

when the cake is cool.... crumble it into a large mixing bowl :D
the easiest way to do it is to just use your hands ;)


add 3/4 the icing mixture - if all of it added, the mixture will be too moist to work with. 
Mix it into the crumbled cake, using the back of a spoon until thoroughly combined. 

The mixture should be moist enough to roll into 1.5in balls and still hold a round shape.

 After rolling the balls by hand, place them on a wax-paper covered baking sheet.


 Chill in the fridge for several hours, or 15mins in the freezer. The balls should be firm, but not frozen. 

.....so that was yesterday,
today i tried to coat them in white chocolate.
err....
how do you melt chocolate properly?!?!?!??!? :X
..yeah
so i didn't end up coating them....

i'm finally going to watch harry potter tonight XD
